Tim began his culinary career in Petoskey, Michigan. He graduated from Grand Rapids Community College, then moved on to attend the Culinary Institute of America Greystone in St. Helena, California. He also earned a bachelor’s degree in marketing from Michigan State University. Upon graduating, Tim traveled to Spain, where he focused on authentic Spanish dishes and other traditional specialties.
After moving to the Twin Cities in 2000, Tim put his culinary skills to work at Aquavit and St. Paul Hotel before becoming the executive chef at Basil’s Restaurant and the Marquette Hotel in downtown Minneapolis. Tim was also the executive chef of the Lifework’s Restaurant Group at 3M and led their health and wellness program.
