Pinstripes Celebrates National PB&J Day

It’s peanut butter jelly time!

April 2 is National Peanut Butter and Jelly Day and Pinstripes is celebrating! The Edina restaurant is taking the classic three-ingredient sandwich and adding in an adult twist.

Starting Monday, Pinstripes will be offering a special menu – the PB&J for Two. It features five courses using the salty and sweet pairing as inspiration.

The first course is the Tenderloin PBJ, an adult take on the sandwich featuring espresso-crusted filet mignon, nut butter and raspberry preserves served on an artisan brioche bun.

The next course is the crustless PB&J Pistachio Salad. A play on the sandwich that features strawberries, blackberries, mint and burrata cheese with pistachios sprinkled around the plate.

Following the salad course will be the Not Your Mom’s Flatbread – flatbread topped with chunky peanut butter, raspberry preserves, fontinella, mozzarella and Fresno peppers.

Next, guests will enjoy the Nutty Chicken Pasta. House-made pappardelle pasta will be topped with cage-free chicken, peanut sauce and finished with cherry-blueberry-bourbon preserves.

The final course is PB&J with a Spoon! The meal concludes with house-made peanut butter gelato and Concord grape sorbet all on top of pound cake.

The PB&J for Two cost $75 for the two-person sharing menu.  For $100, each course will include a wine or craft beer pairing. The menu will be available indefinitely after April 2, with a limited number of reservations per seating.
